The Star-nosed Mole has one of the most extraordinary snouts in the animal kingdom—a pink, fleshy star of 22 tentacle-like appendages containing over 25,000 minute sensory receptors, called Eimer's organs. It is the world's fastest-eating mammal, able to identify and consume a food item in as little as 120 milliseconds. Unlike most moles, it is semi-aquatic, swimming through waterlogged soils and streams in search of prey.
